Kale...

I have been reading a lot recently about the merits of the "superfood", Kale, and decided to give it a try. I ventured to the 'oh too fun' Santa Monica Farmer's Market on Sunday and picked up a big bunch, along with some brussel sprouts & collard greens... <3>
For the recipe...

Yields: 2 servings
  1. Wash & dry 2 cups raw kale (I use my Veggie Wash courtesy of Trader Joe's).
  2. Sautee in a bit of Extra Virgin Olive Oil (I used my EVOO aerosol spray).
  3. Will wilt like spinach. Add pressed fresh garlic (yum!) to taste. Add Kosher Salt.
  4. Add a splash of Toasted Sesame Oil at the end of the cooking for added "nuttiness"
  5. Serve & enjoy! :-)

I served this with a brown rice medley and some BBQ soy tempeh.


I had some leftover & ate it today with Trader Joe's Hearty Grains blend (including couscous, orzo, quinoa, and garbanzos) as my lunch! Yum!
